Strawberry Pavlova

Ingredients for meringue: 

  • 4 extra large egg whites

  • Pinch of kosher salt

  • 2 tsp corn flour

  • 1tsp white vinegar

  • 1 cup of sugar

  • Sliced strawberries 

  • Dulce de Leche

Ingredients for whipped cream:

  • 1/2 tsp of vanilla extract 

  • Heavy whipping cream

  • 2 tbsp of sugar



  • Pre heat oven to 180 degrees F

  •  Place a sheet of parchment paper on a sheet pan. Draw a 9 inch circle on the paper,  then turn the paper over so the circle is on the reverse side.

  • Place the egg whites and salt in the bowl of an electric mixer and whisk the egg whites on high speed until firm, about one minute. With the mixer still on, slowly add the sugar (about 2 tablespoons) at a time and beat until it makes firm, shiny peaks

  • Sieve the corn starch onto the beaten egg whites, add the vinegar and vanilla, and fold in lightly with a rubber spatula. 

  • Pour the meringue into the middle of the circle on the parchment paper and smooth it within the circle making a small dip.

  • Bake for 1.5 hours.

  • Turn off the oven, keep the door closed and allow the meringue to cool completely in the oven for about one hour. 


Whipped cream/ Assembly:


  • Whip 1 cup of heavy cream in an electric mixer.

  •  Add  2 tablespoons of sugar and 1/2 tsp of vanilla extract.

  • Spread the dulce de leche on the meringue and then spread  the whipped cream over. 

  • Decorate with sliced strawberries.
