Thumbprint Coconut Cookies
Ingredients:

Raspberry jam

1.5 sticks of unsalted butter (room temp)

1/2 cup of sugar

3/4 tsp of vanilla extract

Pinch of salt

1 egg (lightly beaten)

6 ounces of sweetened coconut
Steps:

Preheat oven to 350 degrees

Beat sugar, butter, and vanilla until fluffy and pale

Add in flour (gradually) and mix until fully blended

Use your hands to form dough into a ball until everything is incorporated

Roll the dough into 1 inch balls

Dip the dough ball in the beaten egg and then roll in coconut flakes

Line cookies on parchment paper

Using your thumb, or a teaspoon, make an indent in the center of the cookie

Add in raspberry jam, or another flavor and cook for 20-25 minutes until the coconut is golden brown

Let cool for about 10 minutes before serving
