Thumbprint Coconut Cookies 



  • Raspberry jam

  • 1.5 sticks of unsalted butter (room temp)

  • 1/2 cup of sugar

  • 3/4 tsp of vanilla extract 

  • Pinch of salt

  • 1 egg (lightly beaten)

  • 6 ounces of sweetened coconut 

















  • Preheat oven to 350 degrees 

  • Beat sugar, butter, and vanilla until fluffy and pale

  • Add in flour (gradually) and mix until fully blended 

  • Use your hands to form dough into a ball until everything is incorporated 

  • Roll the dough into 1 inch balls

  • Dip the dough ball in the beaten egg and then roll in coconut flakes 

  • Line cookies on parchment paper 

  • Using your thumb, or a teaspoon, make an indent in the center of the cookie

  • Add in raspberry jam, or another flavor and cook for 20-25 minutes until the coconut is golden brown

  • Let cool for about 10 minutes before serving

  • Enjoy!
